It's time to bring one of our favorite vacation spots home. This time, we'll be recreating some of the delicious cocktails from the Sunset Beach Club in the Bahamas. We go there at least once a year and Sunset is always on our itinerary. They have a beautiful atmosphere and great food and drinks. Plus, the staff and people make it a must visit if you are in Nassau. Sit back and relax while I show you a little Bahamian hospitality, Grantham style! Bourbon • 1 oz. Lemon Juice • 2 oz. Pineapple Juice • 1 oz. Orgeat Syrup • 2-3 dashes Bitters • Mix everything in a shaker with ice. Pour over ice in a tall glass. Garnish with lemon and/or mint. • GUAVA LYCHEE MARTINI • 2 1/2 oz. Vodka • 2 oz. Guava Juice or Nectar • 1 oz. Lychee Juice (from the canned Lychee) • 1/2 oz. Lime Juice • Shake everything with ice until well chilled. Strain into a chilled martini glass. Garnish with Lychee. • ROMEO'S CUCUMBER MELON (MELON MAGIC) • 3 slices Cucumber • 2 oz. Vodka • 2. oz. Pineapple Juice • 2 oz. Apple Pucker • 1 oz. Simple Syrup • 1/2 - 1 oz. Navy or Overproof Rum • Muddle cucumber slices in a mixing glass until well crushed and juicy. Add remaining ingredients and ice. Shake until very well chilled. Double strain into a chilled cocktail glass.
