Roasts are minimum prep and maximum YUM! My roast leg of lamb recipe will show you just how easy it is to achieve all that deliciousness!! #lamb, #legoflamb, #roasting • Ingredients: • 1 Leg Of Lamb ( Bone-In Or Boneless) • Approx. 1/4 Olive Oil • 2 Tbs. Garlic Salt ( To Taste ) • 2 Tbs. Fresh Cracked Pepper ( To Taste ) • 15-20 Sprigs Fresh Rosemary ( To Stud Lamb ) • 1 Bulb Garlic, De-Skinned And Cloves Sliced Into Slivers • 4-5 Carrots, Roughly Chopped • 4-5 Stalks Celery, Roughly Chopped • 6 Sprigs Of Rosemary For Pan • 2 Bay Leaves • 1 1/2 Cups Water • Directions: • Take lamb out of refrigerator at least one hour before roasting to achieve room temperature. • Preheat oven to 350F or 176C. • Set up your roasting pan. • Add chopped carrots, celery, bay leaves, rosemary and water to roasting pan. • Set inside so roast is elevated for even roasting. • Set prepared pan aside. • Get room temp roast and coat liberally with olive oil. • Score the fatty side of the lamb. • Rub in the garlic salt and black pepper. • With a sharp knife, pierce deep holes into the lamb and insert rosemary sprigs and garlic slivers randomly. • Drizzle with little more olive oil. • Insert meat thermometer in fleshy part of lamb. If it touches bone, the thermometer will read higher than meat temp. • Place roast in preheated oven for approximately 1 hour and 20 mins. To temp of 127-130f. • Once achieved, take roast out and tent with foil to rest 30 mins. The roast will continue to cook slightly another 2-5 degrees to med. • Slice! #easy, #tasty, #food • ENJOY!!
