This recipe for Fresh Spring Rolls with Peanut Sauce is delicious and guilt-free. We've all eaten spring rolls at some point in time. With this recipe you can easily make them at home and enjoy them any time you like. We made a vegan and gluten-free version here with mixed greens, shredded carrots, shredded purple cabbage, rice noodles, fresh basil, fresh mint (maybe you have some in your yard, or your neighbor's yard), and rice-based spring roll wrappers. We then spoon Organic Spicy Peanut Sauce on top. The Peanut Sauce we use is the one we make at Simpatico Foods. • • This colorful, refreshing dish is a great appetizer or can serve as a light lunch or dinner. It is also a wonderful way to consume more vegetables and eat more without the guilt. This dish is fun to make with other people or in front of visitors wile socializing. This is great social food in the making and in the eating! • The veggie version we make in this video is wonderful. If you prefer, you can also add an additional protein. For that, we'd recommend tofu, shrimp, or chicken. This is a perfect way to use leftover rotisserie chicken. • These fresh spring rolls are Asian-inspired from my homeland. In my home country of Laos we use fresh bean spouts but they tend to poke the rice paper and cause it to split. If you have my sort of luck, if you made five spring rolls you'll probably end up with two or three broken ones.
