This is my preferred method of cooking a standing rib roast. There is a little prep involved, but once it's in the oven you know exactly when it will be ready. The cook time for this recipe is easy, it just requires a little math to start. • Multiply the weight of your roast times 5, and that will be the number of minutes you need to cook the roast at 500 degrees Fahrenheit. Once time is up, turn off the oven and leave the roast for an additional 2 hours. After the 2 hours your roast should be a perfect medium temperature, around 130 degrees Fahrenheit internally. There is no need to let it stand, remove from the oven, slice, and serve right away! • You will need: • -A standing rib roast, your choice of size (Bone in feeds about 2 people per bone). • -Kosher Salt • -Fresh Ground Pepper • -Garlic Powder • -1-2 whole garlic • -1 whole onion • -Several branches of fresh rosemary • -1 stick of butter • The first thing you will do it salt the roast all over liberally with Kosher salt. If you can, do this the day before and leave unwrapped in the fridge overnight. Try to remove it from the fridge about 3 hours prior to cooking time. If you are unable to do it the day prior, salt it when you remove it from the fridge. Also remove from fridge a stick of butter to get to room temperature as well. • Pre-heat your oven to 500 degrees once its to room temperature. • Pat the roast dry with a paper towel. Season liberally with fresh ground pepper, and garlic powder at your discretion. Set roast aside. • Mince 4-5 cloves of garlic, tear fresh rosemary off the stem. Place in a bowl. • Add your stick of butter to the bowl. Add salt and pepper as desired, add any other seasonings you like too. With your hands, mix all the ingredients into the butter well. • Chop up an onion, and crush several cloves of garlic and put them at the base of your cooking pan. Add fresh rosemary to the bottom of the pan as well. Add any other vegetables you might like now too (potatoes and carrots would go well). • Rub your roast down with the butter mixture you made, covering entirely. Place the roast on the rack above your pan with the fat side up. • Place in the oven at 500 degrees Fahrenheit for XX amount of time (5 x weight of roast = minutes needed at 500 degrees). • After cooking at 500 degrees for XX minutes, cut the oven off and set the timer for 2 hours. DO NOT OPEN THE OVEN until 2 hours pass. No need to let stand, remove, slice, and serve! • Music: https://creativecommons.org/licenses/...
