Kässpatzn - or Spätzle with cheese. • It's a southern German staple. You also find this dish anywhere in the northern Alps - from Switzerland to Austria. It depends on intensely flavored cheese, which of course you can find in areas where cows are pastured on lovely mountain slopes. Use any kind of cheese that's flavorful or use a mix of flavorful cheeses.Hint: if you're on the west-coast, Trader Joe's has a couple of imported mountain cheeses from Switzerland, Germany and France - if it sounds weird and looks a bit like parmesan - buy it and use it for this dish. • Please, don't use Velveta or Cheddar (although the later would be less of a sacrilege if it's an aged white cheddar).
