How to Make Tex Mex Corn Casserole

My family is stuck at home due to my husband contracting Covid. I had to find something to make today from the ingredients I had in my pantry, refrigerator, and freezer. This is why I ended up substituting mayo for the other half cup of sour cream the regular recipe recommends. I REALLY liked the way the casserole turned out with the mayo substitution. If you have yogurt, that works as well. • Southern Corn Casserole is a delicious side dish that I decided to spice up a bit by adding diced green chilis and cheese. If you've never gone Tex Mex with your corn casserole, I urge you to try it. Soon. Today, if possible. And don't be afraid to use different cheeses or more cheese. You can never go wrong with more cheese. • TEX MEX CORN CASSEROLE • 1/2 cup Butter, melted • 2 Eggs, lightly beaten • 1/2 Cup Sour Cream • 1/2 Cup Mayo (Or Yogurt) • 1 14.75 oz Can Creamed Corn • 1 Cup Super Sweet Corn, thawed (Or you can use a can of whole kernel corn that you've drained) • 1 4 oz Can Diced Green Chilis • 2 oz Colby Monterey Jack Cheese, shredded • 1 Box Jiffy Cornbread Mix • Preheat oven to 350. • Melt the butter in a large bowl. Stir in the lightly beaten eggs, sour cream, and mayo. Mix until combined. Add the cream corn and whole kernel corn. Mix. • Stir in the chilis and cheese. • Finally, dump in the box of Jiffy cornbread mix. Carefully stir until everything is combined. Pour into a lightly oiled casserole dish. Bake on 350 for 45-50 minutes or until a beautiful golden brown on top with a set middle.
