Serviceberry Oat Muffin Recipe From The Garden

Serviceberry (or Amelanchier canadensis) are a wonderful tree to grow on your property. They are frost hardy, make white flowers in the spring and red to purple (when at their ripest) fruit in mid to late June. The fruit is described as a mix of strawberry and blueberry but to me is 100% delicious. With them in season I decided to pick up and make oat muffins. • Looking to make Banana Muffins? Check out this video: • This is the EASIEST Cornbread Muffin ... • Muffin Recipe: • 4 TBSP Melted Butter • 1/4 Cup Sugar • 1 Egg • 1 Cup Oat milk • 1 Cup Flour • 1 Cup Oats • 1 tsp Baking Powder • 2/3 Cup serviceberries (blueberries would also work) • Bake at 375F for 20-25 minutes or until a knife comes out clean • Serviceberry Jam Recipe: • 250 g Serviceberries with 25 g sugar • 100 g strawberries with 10 g sugar • Juice of 1/2 lime (or lemon) • Add a little water as needed so it can simmer without burning • Heat over medium until big bubbles form then reduce to low for 20 minutes • Place in a jar in the fridge and enjoy on muffins, toast or whatever else you can think of! • Items used in video • Silicon Muffin Tin • A Digital Scale • Mixing Bowls with Lids
