Spicy Pumpkin Pasta Alla Vodka MUKBANG Recipe

Today, I'm back with another pumpkin recipe! This time, we're making and eating Pumpkin Pasta Alla Vodka, with the cutest little pastas that are basically shaped like little pumpkins! They're seriously the cutest ever. I kinda just made this recipe up as I went along. Added what I did below so you can make it yourself! • Ingredients: • couple turns of the pan EVOO • 1 tbsp butter (organic + grass fed -- it matters) • 4 links italian turkey sausage, casing removed • 1 onion, sliced • 3 cloves garlic, minced • 1-? tbsp calabrian chili pepper paste (to your liking) • 1 cup vodka • 1.5 cup san marzano tomatoes, blended • 1 15oz can pureed pumpkin • 3/4 cup cream • 1 cup parmiggiano (freshly grated -- it matters) • 1 lb zucchette/zucca pasta (or whatever you want, but this kind is literally shaped like a pumpkin) • ~ 2 cups reserved starchy (and well seasoned) pasta water • salt! • Instructions: • 1. Brown sausage in a pan with a little oil -- brown until you get crispy caramelized bits all over, then remove from pan. • 2. Add butter and onions, season with salt and sautee until soft and translucent • 3. Add garlic and sautee a minute, or until fragrant, then add chili pepper paste and sautee another minute • 4. Add vodka, and reduce it down by 2/3 -- it's reduced enough once you don't smell any alcohol in the pan • 5. Add pureed tomatoes and pumpkin, season again with salt, and stir to combine. • 6. Then add your cream, parmiggiano, and cooked turkey and combine. At this point, taste for seasoning again (before adding pasta) -- I forgot and tasted after I added the pasta. It's harder to incorporate the salt at that point. • 7. Add your pasta (cooked 2 minutes less than al dente instructions on package) and toss to combine, adding reserved pasta water to add more sauce if you'd like. • 8. Eat! • ** Don't toss the rest of the pasta water! I actually keep a mason jar full of the stuff in my fridge until leftovers are gone.
