Buon Giorno A Tutti. In this episode, Nonna Mia, la nonna di tutti (everyone's grandmother), takes on a suggestion from Frank, her eldest son, to make one of his childhood favourites - peperoni ripieni in Italian. To make this dish, you will need the following ingredients: • 6 to 8 peppers (depending on their size) of any colour you prefer • 1.5 pounds of ground meat (pork beef blend or as you wish) • 1 cup of Italian rice already cooked • 1 onion, diced • 4 garlic, minced • 1 cup of grated parmesan or pecorino cheese or blended if you prefer • 1 cup of grated mozzarella cheese • 3 cups tomato sauce (1/2 c for the cooking tray, 1/2 c in the filling, 2 c for serving) • 1/2 cup of Italian parsley, chopped • 1 egg • 1 tsp of oregano • s p to taste • pecorino for sprinkling on top of each pepper • EVOO for sautéing the onions/garlic • Wash your peppers. Then cut the tops off and remove the seeds and white bits. In a pan with EVOO, fry the onions and garlic until translucent. While we let them cool down somewhat, in a large bowl, add the meat, cooked rice, 2 cups of cheese, parsley, oregano, s p, 1 egg and the onions/garlic and mix well with your hands. Then tuck the filling into the peppers. Coat the tray with some tomato sauce, then place the peppers inside the tray. Top each pepper with some pecorino cheese and add the pepper 'hats' back on. Cover the tray with aluminium foil and bake at 375 for 45 min covered and 30 - 45 min uncovered. Cooking time will vary with the peppers (size/thickness). • Remove from the heat, and let them stand for about 5 minutes.
