Traditional Filipino cassava cake...usually served at birthdays or special occasions. Very moist and not overly sweet, which makes this, extremely addictive! • Ingredients • 2 bags of grated frozen cassava (completely thawed) • 1 can of evaporated milk • 1 can of 400ml coconut milk • 1 can of condensed milk • 2 eggs beaten • 1/2 tsp salt (optional) • 1 tsp of vanilla extract • 1 jar of coconut strings • Topping (taken from cans above) • 3 tbsp of coconut milk • 3 tbsp of evaporated milk • 21/2 tbsp of condensed milk • 2 tbsp of egg whites • 2 tbsp of flour • 2 tbsp of coconut strings • Before mixing all ingredients, in another bowl, take a little from each can and jar and set aside. Once you are done separating, add remaining ingredients to bowl with cassava. Mix thoroughly and bake at 350F for 45min. Mix all ingredients for toppings and pour on top of cassava cake after baking for 45min. Spread topping mixture evenly and place back in the oven for another 15-20mins until topping has dried. Can be served at this time. You can also put under broiler to brown, watch closely tho. Can burn easily. Should be 5-10 min under broiler. • ***ENJOY**** • This video is dedicated to my Tita Julie Jover, who shared this amazing recipe with me...thank you Tita, I miss you! • • #cassavacake • #filipinodessert
