Holly shows how to can pickled beets. • Pickled Beets • Recipe (from Ball Blue Book) • 3 quarts beets • 2 cups sugar • 2 sticks cinnamon • 1 tablespoon allspice • 1 1/2 teaspoon salt • 3 1/2 cups vinegar • 1 1/2 cups water • Cook beets, peel. Combine all ingredients except beets in large saucepan, reduce to simmer for 15 min. Pack beets into hot jars, ladle liquid over beets, leaving 1/4 inch headspace.
