Hi Everyone! I love eating these Mexican-inspired Brooklyn-style Nachos on the weekend with my family and friends. These are especially great on game days (like the Super Bowl!) You can easily make these vegan by either omitting or substituting a few ingredients. I hope you all enjoy these nachos, and remember that you can easily substitute any of the things we are making fresh with already prepared items from the store (like refried beans, the chips, the guac, or the corn salsa) to make this meal even faster to make. I hope you all enjoy! • Written Recipe for Nachos: • This already vegetarian dish can easily be made vegan by either substituting or omitting only a few ingredients! • Ingredients: • For the Beans: • One 16 oz Can (Two Cups) of Beans • One Teaspoon of Oil • Half of One Shallot • One Clove of Garlic • Half of One Jalapeño • Salt to Taste • Black Pepper to Taste • Half a Teaspoon of Ground Cumin • Half a Teaspoon of Oregano • Fresh Cilantro (as much as you want!) • The Juice of Half of One Lime • For the Corn Salsa: • A Cup of Fresh Corn Kernels • Half of One Shallot • Half of One Jalapeño • One Mini Bell Pepper (any color!) • The Juice of Half of One Lime • Fresh Cilantro (as much as you want!) • Half of One Roma Tomato • Half a Teaspoon of Garlic Powder • Half a Teaspoon of Onion Powder • Half a Teaspoon of Red Chili Flakes • Salt to Taste • For the Chips: • Four Tortillas • One Teaspoon of Oil • One Teaspoon of Ground Cumin • One Teaspoon of Red Chili Powder • Any Other Ground Spices You Like! • For the Guacamole: • One Hass Avocado • Half of One Shallot • Half of One Jalapeño • Half of One Roma Tomato • Salt to Taste • Half a Teaspoon of Ground Cumin • Half a Teaspoon of Red Chili Flakes • Fresh Cilantro (as much as you want!) • One Clove of Garlic • For Final Assembly: • 32 Tortilla Chips • A Cup of the Beans Mixture • All of the Corn Salsa • All of the Guacamole • Salsa (mine is homemade (recipe coming soon!), you can buy it jarred) • Optional: Queso (mine is homemade (recipe coming soon!), you can buy it jarred) • Optional: Half a Cup of Four Mexican Cheese Blend • Optional: A Tablespoon of Sour Cream • Directions: • 1.To make the bean mixture, place a medium size pan over medium-high heat and add a teaspoon of olive oil. When the oil is hot, chop and drop half a shallot, a clove of garlic, and half a jalapeño. Then, add the beans, adding salt and black pepper to taste. After tossing it, add a half teaspoon each of ground cumin, dried coriander, and oregano. Mix and then mash it! Finally, add the juice of half a lime, and the beans are done. • 2.To make the corn salsa, take a cup of fresh corn kernels (you can also use defrosted frozen corn kernels) and put them in a bowl. To the corn, chop and drop half a shallot, half a Roma tomato, half a jalapeño, and a mini bell pepper. Squeeze the juice of half a lime and add fresh cilantro, along with half a teaspoon each of garlic powder, onion powder, and red chili flakes. Salt to taste, mix it, and the salsa is ready! • 3.To make the chips, cut four tortillas into eight pieces each. Put them in a bowl and add a teaspoon each of oil, ground cumin, red chili powder, and any ground spices you want. Mix the chips, making sure that each chip is evenly coated with spices. Put them in the oven for three to four minutes until golden brown at 375°F (190°C). • 4.To make the guacamole, in a medium sized bowl, chop and drop half a shallot, half a jalapeño, half a Roma tomato, and a clove of garlic. Squeeze the juice of half a lime, and then scoop out your sliced avocado. Salt to taste, and add half a teaspoon each of ground cumin and red chili flakes. Add fresh cilantro and mash it to mix, and the guacamole is ready. • 5.To finally assemble the nachos, place a layer of chips, and spread a third of the beans, a third of the corn salsa, two teaspoons of queso, two teaspoons of salsa, and some cheese. Repeat this process two more times. Put it in the oven for 2-3 minutes on broil, and then spread all of the guacamole on top, as well as a tablespoon of sour cream and some more salsa. • 6.The nachos are ready!
