De constructed Vagharelo Rotlo : • Ingredients: • #For the Bajra Coins: • • 1 cup bajra (pearl millet) flour • • Water (as needed) • • Salt (to taste) • #For the Sauce: • • 2 tbsp oil • • 1 tsp cumin seeds • • 5-6 curry leaves • • 1 tbsp ginger-garlic-chili paste • • 1 onion (finely chopped) • • 1/4 tsp hing (asafoetida) • • 2 tomatoes (finely chopped) • • 1 tsp turmeric powder • • 1 tsp red chili powder • • 1 tsp coriander powder • • 1/2 cup boiled moong dal (optional for added thickness) • • 1 cup buttermilk • • Salt (to taste) • • Roasted sesame seeds for garnish • Instructions: • • In a bowl, mix bajra flour, salt, and water to form a soft dough. • • Roll the dough into small balls and flatten them into little coins. • • Heat a pan and cook the bajra coins on low heat until golden and crispy on both sides. • • Heat oil in a pan. Add cumin seeds, curry leaves, and the ginger-garlic-chili paste. Sauté until fragrant. • • Add chopped onions and cook until they turn golden brown. • • Mix in hing, chopped tomatoes, and spices.
