Pork Katsu Curry Recipe

The pork katsu (aka tonkatsu) curry is a popular comfort food, combining pork cutlet Japanese curry! • [Curry Ingredients] • 1 box Japanese curry roux (Java Curry used in video) • 3 onions, 2 carrots • 15g garlic ginger • 1 tsp powdered cumin coriander • 1500ml water • [Pork Cutlet Ingredients] • 1 thick pork loin • Salt pepper • Flour, egg, bread crumbs • 1. Thinly slice onions, grate carrot, garlic ginger. • 2. Heat cover pot with oil, lightly sauté cumin coriander. • 3. Add the onions carrots, briefly sauté. • 4. Lightly cook the garlic ginger in seperate pan, then put into pot. • 5. Sauté until onions are lightly caramelized. • 6. Pour water, bring to boil as you scoop out the foam, simmer in low heat for 1 hour. • 7. Turn heat off then dice up curry roux, pour some broth into seperate bowl, melt the curry roux, pour back into pot. • 8. Stir simmer for 10 more minutes. For even more flavor, refrigerate overnight. • 9. Make small incisions along fat of pork loin (ideally room temperature), tenderize, cover in salt pepper. • 10. Cover in flour, egg, bread crumbs. • 11. Fry each side at 320°(F) for 3 minutes (6 minutes total, can vary depending on thickness of pork loin). • 12. Rest for 5 minutes, then fry in out at 355°(F) until golden. • 13. Cut it up, put on top of rice, pour the curry. • #recipe #cooking #japanesefood
