Carnation Milk Mac and Cheese Recipe 1951

Macaroni and cheese using Carnation Evaporated Milk 1951 recipe. The recipe is so simple (see below) and yet... would it have turned out fine with just 1/2 lb of cheese? Wasn't looking good, so I used an extra 8oz of Monterey Jack I had on hand. Total 1 lb including cheese for topping. And why remove from heat? AHHHH!!!! Came out great though sharing :) • Starring: Corning Ware Blue Cornflower 10 skillet P-10-B and Farberware 2.5 qt saucepan. • Carnation Milk Print Ad 1951 • Mac cheese • 1 8-oz. pkg. elbow macaroni • 1 large can Carnation Milk, undiluted • 1/2 lb. American Cheese, grated or diced • Salt and pepper to tatse • Cook macaroni in boiling salted water until tender; rinse; drain. Heat Carnation Milk until small bubbles appear around edge of pan. • Remove from heat; cool slightly, and blend most of cheese until smooth. Pour over macaroni in buttered baking dish. Top with remaining cheese. Bake 30 minutes in moderately slow oven (325) - or place under broiler • till top cheese melts.
