Vegan Garlic Fried RiceNo Oil

Vegan Garlic Fried Rice is one of my favorite dishes, but most Garlic Fried Rice is not vegan and even if it is it has a ton of oil in it. This recipe for Vegan Garlic Fried Rice is made with no oil and Bonus it is Gluten Free! Believe me you will not miss the oil at all. This recipe is packed with flavor. • *ingredients* • veggie broth for sauteing • 2 T shallots minced • 8-10 gloves of garlic minced • 1/2 inch minced fresh ginger • 2 cups cooked rice • 1/4 cup or less of coconut aminos • 2 T of chopped green onions • 1/4 cup frozen peas defrosted • salt and pepper to taste • saute shallots in veggie broth for a couple of minutes, then add garlic and ginger and saute for another couple of minutes. Add rice and break it up and heat it through.
