Recipe 79 • Pineapple Pulissery is very popular among the pulissery recipes as pulissery can be made with a variety of veggies / fruits like pineapple, yam, vazhakka, mango etc. Pulissery is a traditional Kerala side dish served in Sadya. Serve this with hot steaming rice, it will be heaven! • Ingredients • Pineapple (small) • Grated fresh coconut 1 cup • Cumin seed 1/4 tsp • Green chilli 2 • Curry leaves • Turmeric powder 1/2 tsp • Chilli powder 1tsp • Yogurt (curd) 3/4 cup • Jaggery (small piece) or sugar • Salt • Coconut oil 1tbsp • Dry red chilli 2 • Mustard seed 1/2 tsp • Fenugreek seed 1/4 tsp • water 1 glass • Method of preparation • Transfer pineapple pieces in to cooker. Add chillipowder, turmeric powder • salt and water. • Cook 6 whistle on medium flame. • Grind the coconut with cumin seed, green chili, curry leaves. If • you want garlic, you can add. • Now pineapple is cooked well. Add grinded coconut. • Add required water and check the salt. Add salt if needed. • Let this boil well. After that add yogurt. • Yogurt should beat well before adding. • It should not boil. It should just get hot . You can add jaggery or • sugar. Mix well and turn off the flame. • Pour coconut oil into a heated pan. Add Mustard seed and Fenugreek • seed. • After it pops add dry red chilli and curry leaves. • Turn off the flame and add to curry .Mix well and close the • cooker for 2 minutes. • Pulissery is ready.
