how to quick CARAMELIZE ONIONS and how to do it slowly too

showing you two ways to caramelize onions today, one that takes over an hour and the other that can be done in just 20 minutes (15 if you're paying attention)! the only ingredients you need are onions, butter, water and some patience. caramelized onions turn a rich, deep brown color, get kind of jammy in texture, and are super sweet. add them to salads, soups, sandwiches, or just eat them out of the jar - if you're not an onion like-r, i bet you're actually just a undiscovered caramelized onion lover. or something. • long cook: • thinly slice a few onions (we used two large and the yield was less than a pint). over low heat in a wide pan, toss them with 2T butter. stirring occasionally, cook onions until they are caramelized to your liking, 60-90 minutes. if you crowd your pan they'll take a lot longer, so try to keep the onion layer just a couple inches deep maximum. • short cook: • thinly slice a few onions (we used two large and the yield was less than a pint). over high heat in a wide pan, toss them with 2T butter. wait two minutes. add 3T water and scrape up any bits left on the bottom of the pan. when the water has cooked out (approx 60-120 seconds), add another 2T water. repeat this process until the onions are caramelized to your liking. this took us about 20 minutes, but had we been solely focused it can be done in 15. • curious about why this works? kenji has a great article here: https://www.seriouseats.com/quick-car... • TOOLS THAT I LOVE!!
