Shelley shows how to poach the perfect egg. • http://thechoppingblock.net/ • Bring a wide, shallow pan of water to a simmer and add 1 teaspoon lemon juice or vinegar. Crack each egg onto a plate and gently slide into the water. Cook until yolk is less yellow and white is no longer translucent about 3-4 minutes. Use a slotted or perforated spoon to gently remove the egg. Pat on a clean dish towel to remove excess water and serve.
