Like and subscribe • / jaxxdrinkh20 • How to dry age a steak using your refrigerator. • Cover steak with a paper towel, placing it on a cooling rack so air can circulate under the steak .Do Not Lay it flat! After 24 hours replace with a fresh paper towel. Place back in the bottom of the refrigerator for another 3 days. Then grill! you will be rewarded for your efforts. I place my steaks in the very back of my fridge as that is the coldest part. I also try to keep my refrigerator in the low to mid 30 degree range while dry aging steaks. • Americas test kitchen says that 4 days is best for aging; After much research the consensus is this: You will never achieve a steak from your refrigerator that taste like one that was aged in a controlled environment for 21 or more days. Our refrigerators are constantly being opened and closed and we have other foods in there that can affect the flavor, we also have no constant airflow moving around the meat. All this being said I noticed a considerable difference between the two steak with the aged steak being more tender and more flavorful. My taste test might have been effected by a few possible different reasons. Which are 1) The steaks could have been cut from different cows? 2) I froze one of the steaks and not the other. 3)one could have possibly been more marbled than the other. I recomend you try your own experiment and decide for yourself. If you do please leave me a comment and let me know how it turned out.
