Set aside for 4-6 minutes. • Mix the yeast water in the bowl with the flour and salt with a spatula. Continue mixing until all the ingredients are well incorporated and a shaggy dough has formed. Coat the dough and bowl with olive oil to prevent drying. • Cover the bowl tightly with plastic wrap or a kitchen towel and let the dough rest at room temperature for 2 hours. After 2 hours, uncover the bowl; wet your hands with water to prevent the dough from sticking, then pull and stretch the dough out and fold it towards the center. Do this a few times around. • Coat the inside of the air-tight container with olive oil. Place the dough in the container and place in the fridge for 24 hours. The longer the rest, the more flavor will develop. • Alternatively, you can let the dough rest for 6-8 hours, and use it that same day. • After the resting period, the dough will be puffy and covered in small bubbles. If you stored it in the fridge, you'll need to let the dough come to room temperature before shaping it into a pizza. • While the dough is resting, prepare your sheet pan by coating it with olive oil. • Place your dough on the sheet pan and stretch it evenly to the edges. If the dough doesn’t stay in place, let it rest for 10-15 minutes and try again. Once the dough has stretched to the edges, cover it with a lightly oiled plastic wrap. • Let the dough rest for another 1 to 1.5 hours or until it has doubled in size. While the dough is rising, preheat your oven to 450F for at least 1 hour. • This is a good time to make the garlic butter. Turn the garlic clove into a paste using a mortar and pestle and combine with the butter at room temperature. • After the dough has doubled in size, par-bake the dough by baking it in the oven for 12-15 minutes. Rotate the pan 180 degrees at the halfway point for even baking. • After 12-15 minutes, remove the pan from the oven. Time to add your toppings. Spread the garlic butter evenly around the dough. Sprinkle in the oregano, mozzarella cheese and the parmesan cheese. • Once you’ve added your toppings, bake the pizza again for 12-15 minutes. Rotate the pan 180 degrees at the halfway point for even baking. • Once the pizza is done baking, and if you’d like it to be crispier, broil it for 1-2 minutes. Keep a close watch as it crisps up pretty quickly. • There you have it – a step-by-step guide to creating an irresistible Garlic and Cheese Sicilian pizza that will impress your friends and family alike.
