A delicate, smooth and succulent chicken dish, this Sweet and Sour chicken is a medley of taste. • SWEET AND SOUR CHICKEN • Ingredients • 450 grams boneless chicken, cut into 1 inch pieces • 1 tablespoon oil + for deep-frying • 1 egg • 1 tablespoon cornstarch • 1 tablespoon refined flour (maida) • Salt to taste • Crushed black peppercorns to taste • 1 tablespoon chopped garlic • 1 inch ginger, finely chopped • 3-4 spring onion bulbs, chopped • 2 tablespoons tomato ketchup • 1 teaspoon soy sauce • 1 cup chicken stock • 1 teaspoon sugar • 1 tablespoon cornstarch slurry • 2 tablespoons vinegar • 1 tablespoon chopped spring onion greens + for garnishing • Method • 1. Heat sufficient oil in a kadai. • 2. Put chicken pieces in a bowl. Add egg and mix. Add cornstarch, refined flour, salt and crushed peppercorns and mix well. • 3. Put the prepared chicken pieces in hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper. • 4. Heat 1 tablespoon oil in a non-stick pan. Add garlic and ginger and sauté for 30 seconds. • 5. Add spring onion bulbs and sauté for 1 minute. Add tomato ketchup and mix. Add soy sauce and chicken stock, mix and cook for 1 minute. • 6. Add sugar, salt and crushed peppercorns and mix. Add cornstarch slurry, mix and cook till the mixture thickens. • 7. Add vinegar and mix. Add fried chicken pieces, mix and cook for 1-2 minutes. Add 1 tablespoon spring onion greens and mix well. • 8.
