Chewy Pumpkin Cookies

Hey spice lovers! I'm delighted to share my recipe for a very chewy and delicious pumpkin Kim cookies. Thanks for watching and i'll see you on the next one. • • PUMPKIN COOKIES RECIPE • INGREDIENTS • FOR THE SPICED SUGAR • • 1/4 cup (50 g) granulated white sugar • • 1/2 tsp pumpkin pie spice • FOR THE PUMPKIN COOKIES • • 3/4 cup (168 g) unsalted butter, softened • • 1 cup (220 g) light brown sugar • • 2 egg yolks, at room temperature • • 2 tsp vanilla • • 1/2 cup (122 g) canned pumpkin puree • • 1 3/4 cups (219 g) all purpose flour • • 1 tbsp pumpkin pie spice • • 1/2 tsp baking soda • • 1/2 tsp baking powder • • 1/2 tsp salt • • INSTRUCTIONS • FOR THE SPICED SUGAR • • In a small bowl mix the granulated sugar and pumpkin pie spice together. Set aside. • FOR THE PUMPKIN COOKIES • • Preheat oven to 350°F/175°C and line your baking sheets with parchment paper. • • Dry your pumpkin by spreading the canned pumpkin on a plate and pressing very gently with a paper towel to absorb any excess liquid. (The cookies will not bake properly if you skip this step.) Repeat at least four more times. • When you’re done, the pumpkin puree should go from being 1/2 cup to about a 1/4 cup and hardly any liquid should transfer onto a paper towel if pressed again. Set aside. • • Whisk together the flour, pumpkin pie spice, baking soda, baking powder and salt. Set aside. • • Cream the softened butter and brown sugar together by hand or with an electric mixer (on high speed for 1-2 minutes) until light and fluffy. • • Add in the egg yolks and vanilla and mix until pale and fluffy (on medium speed if using a mixer, about 1-2 minutes). • • Add in the pumpkin and mix (on medium-low speed if with mixer) just until combined. • • Add in the dry ingredients and mix (on low speed if by mixer) until combined. • • Scoop the dough, about 2 tbsp per scoop, and roll them into balls. Then roll the dough balls in the spiced sugar. • • Place the dough balls at least 2 inches apart on the baking sheets. • • Bake the cookies for 12-14 minutes. (12 minutes for really chewy centers, 14 minutes for a slightly crispier cookie). • • Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a cooling rack to finish cooling. • #pumpkincookies #pumpkinspice #fallrecipes #cookies #pumpkinspiceeverything #pumpkin #bringonthespice
