chicken potato salad! • i boiled 4 chicken thighs with a small piece of onion, garlic and salt. once cooked, let it cool, remove skin, shred. you can also used a rotisserie chicken for an even quicker lunch/dinner. • next, i boiled one diced russet potato and one diced carrot. boil until tender, strain and cool. • in a small bowl, i mixed about 1 cup sour cream with 1/2 cup mayo, 1 TBSP mustard, splash of worcestershire. (i sort of just eyeballed this so you can add more if needed) • add cooled potatoes and carrots to cooled chicken, add shredded lettuce, pour cream mixture, add garlic powder and salt, taste to adjust your seasonings and enjoy! you can serve it on tostadas or on some yummy toasted sourdough bread. • #mexicanfoodlover #potatosaladrecipe #recipe #foodielife #
