Pinoy soft ensaymada • 2 cups evaporated milk (it is easier to work on your dough if your liquid is warm) • 1/2 cup warm water • 1 and 1/2 cup white sugar • 1 teaspoon salt • 5 egg yolks • 1/2 cup butter • 3/4 cup vegetable shortening (can be substitute with oil, if so reduced to 1/2 cup) • 2 tablespoon vanilla • 7 cups all purpose flour • 1 and 1/2 teaspoon instant dry yeast( you can adjust the resting time make it a little bit faster by adding the measurement of the yeast by 1 tablespoon) • 1 whole egg for egg wash • icing: 100 grams butter • 1/2 cup icing sugar/powdered sugar • white sugar for sprinkle • grated cheese • mold used: 5.5 oz. mamon mold • • work on your dough until you reach window pane test it takes about 10 to 12 minutes when kneading with hand and less than 5 minutes if using a stand mixer • after kneading rest for 2 hours or until you see that dough has double in size • after shaping and putting in your mold rest again for 2 hours or again until you see it already has double in size • baking temperature 160°C bake for 15 to 20 minutes depend if you like mestiza or brownish top☺ • thank you for watching☺☺☺ • #ensaymadarecipe • #pinoybakery • #pinoybread
