Gunting bagian depan kepala udang, kaki, dan keluarkan kotoran udang • 2. Marinasi udang dengan putih telur, baking powder, cuka, garam, merica, tepung maizena, dan bubuk ngohiong, aduk rata diamkan 10-15 menit • 3. Panaskan minyak goreng udang di api besar selama satu menit, tiriskan diamkan beberapa saat lalu goreng kembali beberapa detik, tiriskan • 4. Panaskan sedikit minyak lalu goreng bawang putih hingga kuning keemasan, tiriskan • 5. Tumis bawang merah, daun bawang, cabai rawit, cabai merah, garam, merica, gula, dan saus tiram, aduk lalu masukkan udang yang telah di goreng, aduk rata • 6. Taburkan bawang putih goreng • 7. Udang cabe garam siap disajikan • =================== • [ENGLISH] • Spicy Salt Pepper Shrimp Recipe (yield 4-5 servings) • Shrimp ingredients: • 500 g whole shrimp with shell • 1-2 tbsp egg white • 1 tsp baking powder • ¾ tsp salt • ¼ tsp pepper • 6 tbsp cornstarch • 2 tsp vinegar • ½ tsp Chinese five-spice powder, optional • Oil for frying • Spicy Salt Pepper Seasoning ingredients: • 10-12 clove garlic, minced • 2-4 pc shallot, sliced • 1 pc green onion, sliced • 3 pc red curly chili, sliced • 4 pc red bird’s eye chili, sliced • ⅓ tsp salt • ¼ tsp pepper • ½ tsp stock powder / flavor enhancer • ½ tsp sugar • ½ tbsp oyster sauce • Oil to sauté • Steps: • 1. Trim the shrimp’s head area, legs, and devein it. • 2. Marinate with egg whites, baking powder, vinegar, salt, pepper, cornstarch, and Chinese five-spice powder. Mix well and marinate for 10-15 minutes. • 3. Heat the oil. Fry the shrimp on high heat for 1 minute. Set aside and let it rest for a moment, then fry it again for a few seconds. Set aside. • 4. Heat some oil and fry the garlic until golden. Set aside. • 5. Sauté the shallots, green onions, bird’s eye chili, red chili, salt, pepper, sugar, and oyster sauce. Stir, then add the fried shrimp. Mix well. • 6. Sprinkle the fried garlic on top. • 7.
