First, it needs to soak for about 30 minutes ideally, an hour if you plan ahead. Then, it needs to be heated to a boil. When it starts boiling is, it gets turned down to a simmer, and covered for about 25 minutes. During the last 3 minutes, the fire should be cut off, and the carryover cooking allowed to finish it off.
