How to make buddha's delight. This Chinese vegetarian dish is called 羅漢齋 Lo Han Chai. • Part One Ingredients: • 4½ cups (1125ml) water • 4 dried Chinese mushrooms (called 冬菇 or 干冬菇 in Chinese) • *reserve ¾ cup (185ml) of the soaked mushroom liquid • ¼ cup (60ml) dried lily flowers, also called golden needles, daylily buds, lily buds (called 金針菜 in Chinese) • 5 pieces dried cloud ear fungus, also called dried black fungus • (called 雲耳 in Chinese) • Part Two Ingredients: • ½ cup (125ml) dried black moss, also called dried hair seaweed, fat choy, hair moss (called 發菜 or 髮菜 in Chinese) • 2 cups (500ml) water • Part Three Ingredients: • 1 tbsp (15ml) vegetable oil • 1/3 cup canned ginkgo/gingko nuts, rinsed (called 白果 in Chinese) • 1 tbsp (15ml) light soy sauce • 8 pinches of salt • ½ tsp (2.5ml) sugar • ¼ tsp (1ml) sesame oil • Note: I use the small stove and bring the water to a boil over high heat 8. • Note: During cooking, I use the big stove and turn on medium heat 4. Later simmer over low heat 2. • Note: You may come across a mushroom that won't soften even after 45 minutes of soaking, just throw it away. • Note: It's always better to eat fresh ginkgo nuts if you can find them instead of the canned ones. I did find the shelled ginkgo nuts in vacuum packed package in the produce section.
