Danish Wedding Cookies Ingredients: • 2 sticks of softened margarine • 2 Tablespoons of coconut oil • ¾ cup of powdered sugar • 3 cups plain flour • ½ cup pecan flour • ¾ teaspoon salt • ¼ teaspoon cinnamon • ¼ teaspoon of vanilla extract • 1 teaspoon of coconut flavoring • 3/4 cup of finely chopped pecans (crushed in mortar pestle) • ¾ cup mini semi-sweet chocolate chips (crushed in mortar pestle) • ¼ cup angel flake coconut (crushed in mortar pestle) • *Will need enough EXTRA powdered sugar for dusting the warm cookies to look like snowballs. (You will need around two cups) • Making and Baking Directions: • Preheat oven to 400 degrees, have rack on second from top. • In stand mixer, cream sugar, coconut oil, and margarine. • Add flours, salt, and cinnamon. • Add vanilla and coconut flavorings. • Stir in crushed pecans, coconut, and chocolate chips by hand. • Roll and flatten into little discs around 1 inch in size to be like those classic cookies in that pink box no longer found on grocer’s shelf. Place on parchment lined baking sheet and bake for 8-10 minutes until golden brown. They should not spread or rise. • Remove from oven and from baking sheet, place on paper towels to slightly cool but while still warm dredge each cookie through a medium size bowl filled with powdered sugar to coat them. • Makes around 14 dozen cookies.
