One of the traditional and authentic Iraqi recipes. This recipe is a very old one. It is from my mom’s family cooking recipes collections. My mom learned it from my grandma and my mom passed it to me . This is the right way to make this kind of bread. You will be amazed how tasty this bread is! It is very addictive bread and one of my mom's favorite types of bread. This recipe in my opinion is a must try! Thank you nana for this great recipe. Very important the fat in this recipe. If for some reason you don't want to add the fat, you can use olive oil about 3-4 Tbsp. • 1 cup chopped parsley • 1 cup chopped onion (green and white) • 1 cup chopped red pepper or combinations of other colors • ¼ cup chopped hot green pepper • 1 cup chopped sweet green pepper • 1/2 cup green onion • 1 Tbsp. curry powder • 1/2 Tbsp. turmeric powder • 2 tsp salt or to taste • 1 tsp black pepper • 1 envelop dry yeast • 1 tsp sugar • 1 - 1 1/2 cup warm water • Steps:- • -Cook meat on high flame until slightly brown. • -Prepare the yeast by adding sugar, dry yeast and water. Let rest for about 10 minutes. • -Wash and drain burghul very well. sit aside for 20-30 minutes • -Add flour to the burghul and mix well. • -Add spices and salt and mix well. • -Add meat, oil and all the chopped vegetables and mix well. • -Add yeast water and mix well then add more warm water if you need to and knead the dough for about a few minutes. The dough should be very soft. • -Cover and put in warm place to rise about 1 to 2 hours. • -Line up baking sheet with parchment paper or aluminum foil. • -Divide into 5 portion or depend how big you want the bread to be. • -Take one portion of the dough. Oil your hand and flatten it into a circle about 7 inches and ¼ inch thickness. • -Bake in preheated oven to 450 F for about 30 minutes or until the bread is golden brown. The bread is flat and that is the character of the bread. • -Cover the bread if you like them soft otherwise leave them as is. • -They freeze very well. • -Serve them with yogurt or cup of tea or as is :). • • Note:- Leave out the meat if you like them veggie completely.
