#Pan de Coco • #Philippines • Ingredients: • For dough • 5 cups all purpose flour flour • 1 cup water • 1 cup fresh milk • 1/2 cup granulated sugar • 1/4 cup melted butter • 2 tablespoons rapid rise yeast • 1 large egg • 1 teaspoon salt • For Filling • 2 cups grated coconut • 1 cup brown sugar • 1 cup water • 1 teaspoon vanilla extract • Eggwash • 1 egg • 1 tablespoon fresh milk • Cooking oil for coating • Procedures: • For dough • 1. Mix together the 1 cup milk and water then microwave for 50 seconds . Add yeast and 1 tablespoon of granulated sugar. Mix well the set aside to rise. • 2. In the mixing bowl add all purpose flour, granulated sugar, salt, melted butter,beaten egg and the yeast mixture. Mix well until the dough formed and become elastic. • 3. Transfer to the clean flat surface , coat it with cooking oil, formed a ball then put it back to the mixing bowl to rise for 1 hour. While waiting to rise go ahead and make your filling. • For filling: • 1. Add 1 cup of water , 1 cup brown sugar, and 1 tablespoon of vanilla extract in a saucepan. Bring it to boil , then add the grated coconut. • Cook the coconut until it’s almost dry, then let it cool. • Cut the dough in 16 equal pieces, form a ball , then flatten it using your palm . Put a tablespoon of coconut filling in the middle and connect all sides of the dough , then pinch and turn until it’s sealed. Place the filled dough in the baking sheet smooth side up. Using toothpick, poke holes over the filled dough. • For egg-wash: • Combine egg and milk and beat well.
