I learned Iraqi cooking from my mom. My 5 sisters and I all learned from her the authentic delicious Iraqi cooking. She used to spend hours in the kitchen to provide us with good quality homemade and fresh meals every day. She is the best cook ever. Everything from her hand would taste delicious even if she boiled an egg :) . So we all learned from her and walked her steps and even more we started to explore the cooking world. So thank you mom so very much for teaching us at a young age to love cooking. • Love you so much nana :) • • For the Filling: • Stem of one bunch of the swiss chard, chopped into small size • Flesh of zucchini and eggplant plus one small whole eggplant chopped into small size • 1 cup diced mushroom • 2-3 green onion chopped • I medium onion chopped into small size • 4 to 6 cloves of garlic chopped into small size • 1 medium tomato chopped into small size • 1 cup parsley chopped • 1/2-1 cup dill chopped • 1 cup olive oil • 1 small can of tomato paste (6 oz.) • 2-3 tsp black pepper or to taste • 1/2 tsp hot red pepper or to your taste • 1 tbsp. salt or to taste • 3 cup of rice washed and drained very well • Steps- • -Heat a little of oil in a large pan over high heat, add eggplant and fry until eggplant turn brown. Remove and keep a side. • -In same pan add a little of oil then add mushroom and cook until the mushroom turn brown. • -Add onions, swiss chard stems and garlic. Link below • 1 jar grape leaves- washed very well and cut the stem. • 2-3 onion- boil for a few minutes or hit the onion on a hard surface until it gets tender then open it in the center to get the individual leaves. Link below • 2-3 small zucchini- core.( keep the flesh for the filling) • 2-3 small eggplant- core.( keep the flesh for the filling) • 1-2 small green pepper or any other colored pepper- just open from the top and clean the inside from the seeds. • 1-2 bunch of swiss chard- boil for a few minutes until wilted. (keep the stem for the filling) • Water up to the level of the dolma • 1/4 cup Lemon juice or 1 tsp lemondozi (citric acid). This will help the vegetables stay in their places during the cooking time . • -Add the lemon juice or citric acid, olive oil, and tap water just to reach the last layer of the dolma. • -Boil on high flame for the first half an hour.
