Traditional Turkish Ramadan Pide By Aysenur Altan

Turkish Ramadan Pide is a bread made specially for the month of Ramadan to eat along with iftar (feast breaking meal) time and sohuur (breakfast before dawn). • In Turkey during Ramadan, close to iftar time you can see many people waiting in the line in bakeries to get a hot Ramadan pide for the meal to eat with some breakfast varieties we call iftariyelik • It is easy to make your own pide at home and enjoy warm around the iftar and suhoor without with the comfort of staying at home :) • For The Ramadan Pide You will Need • 2 cups of lukewarm water (500ml) • 1 tbsp dry yeast • 1 tbsp sugar • 1 tbsp olive oil • about 5+1/2 to 6 cups flour • 1 tsp salt • Wheat Germ or semolina or Coarse corn meal to dust or you can line a baking sheet if you don't have them • For the egg wash: • 1 egg yolk • 1 tbsp plain yogurt (if you do't have add milk) • 1 tbsp olive oil • roasted sesame seeds and nigella seeds to sprinkle op top • Bake in 210 C degree preheated oven for 10 minutes. Lower the temperature if it is browned quickly and check for golden color on top and bottom.
