MUSHROOM AND HERB MILLET RISOTTO

Try this upgraded version of risotto made with millet. Millet is a superior grain to rice for those who are working on healing. It's tasty, with a slightly nutty flavor, and has a good texture to it. We love millet! This meal is loaded with healing ingredients and flavor and goes very well with a nice leafy green salad. This is a medical medium recipe, a brain saver recipe, and is quite yummy and soothing. • Enjoy! • Ingredients: • 1 medium onion, finely chopped • 2 cups thinly sliced mushrooms • 2 garlic cloves, finely chopped • 1 cup millet • 1 teaspoon paprika • 1 tablespoon fresh thyme or 1 teaspoon dried • 1 tablespoon fresh oregano or 1 teaspoon dried • 4 cups Healing Broth (see link to video below) or water • 1 cup loosely packed fresh parsley and/or basil, finely chopped • 1/4 teaspoon sea salt (optional) -- I used 1 teaspoon of sea salt! • Place a large ceramic nonstick pot on medium-high heat. Add the onion and mushrooms and cook for 3 to 5 minutes until softened. • Add the garlic and cook for another 2 to 3 minutes. Reduce the heat to medium-low. • Add the millet, paprika, thyme, oregano, and 1 cup of Healing Broth or water. Stir until evenly mixed. Cook for 17 to 20 minutes, stirring every few minutes and adding more Healing Broth or water as needed. I ended up using 5 cups of Healing Broth and cooking for 45 minutes en total! • When the millet is cooked, stir in the fresh parsley or basil.
