This Chewy Oatmeal Cookie recipe is awesome because you can make them up and freeze the dough. You just pull out however many or few that you want and bake up a sweet chewy cookie treat. This recipe is gluten-free, so it suits my needs even more. • I adapted this recipe to reduce the sugar a bit. I used 3/4 cup of packed, light brown sugar instead of the 1 cup called for in the original recipe. I forgot an ingredient until I was tidying up and realized I hadn't used it. By adding it later I ended up with a finer oatmeal texture because the grains were crushed more with the extra mixing. The flavour and softness of the cookies came shining through, just a different texture.
