This is the only carol I know in 5 beats to the bar. The tune was written by Claude-Henri Vic and dates from the 1960s. Sheet music is at http://www.stellatripp.co.uk/IanInstr... . I made the crumhorn from a kit kindly given to me by my work colleagues at the University of Exeter. The woodcuts are by Hans Burgkmair, from the Triumph of Maximilian series (1526).
