Lemon Spinach Orzo for the perfect family meatless meal

This little rice shaped pasta makes a great meatless meal! Especially when you add roasted carrots on the side. Choose the whole wheat version for more fiber and protein! • Recipe is below. Find out more about me or snag a cute branded apron on www.cookandcreateforkids.com • 1 cup orzo • ¼ cup vegetable broth • 1 cup fresh spinach, chopped • 2 tablespoons sun dried tomatoes in oil, drained and chopped • 2 tablespoons olive oil • Juice of half a lemon • Lemon zest • 1/2 cup frozen corn • 1 tsp Pesto • 1 small yellow onion, diced • 2 cloves garlic, minced • 2 tablespoons shaved parmesan ( you can also sub for crumbled goat cheese or feta) , plus more for serving • Kosher salt • Freshly ground black pepper • Cook orzo In vegetable broth and drain. Rinse with cold water and coatwith 2 tablespoons of olive oil of olive oil. Move to a bowl and Set aside. • Sauté onion garlic, and in rinsed and drained corn. Let cook for about 2 minutes. • Add garlic, onion, and corn to orzo. Add sun dried tomatoes , Lemon zest • Juice of half a lemon • 1 tsp Pesto . Chopped, spinach, cheese, and season with salt and pepper as needed.
