With these shortened forks I bake rolls today, which require a certain amount of practice in their craft. But since I don't just want to bake these buns until I understand the craft, I had this idea with the sawed-off forks. Because these forks then have this curve, which I urgently need so that the buns look like the original buns or at least look almost like them. What do you think about that? • Ingredients for the bun dough: • 700 grams spelled flour type 630 or wheat flour type 550 • 225 grams of water • 30 grams of sugar • 14 grams of salt • 42 grams of yeast • 200 grams of yogurt • For painting: • 1 egg yolk • 2 tablespoons of milk • Procedure and rest periods: • Knead the dough briefly. • Then let it rest for 30 minutes. • Then knead for 7 minutes and leave to rest for another 60 minutes. • Cut out 110 heavy pieces of dough, grind into a ball and leave to rest for 20 minutes. • Then grind the dough pieces again and press in the pattern with a fork.
