Sauté the Veggies: • In a skillet, heat 2 Tbsp of olive oil over medium heat. Add chopped red onion, red bell pepper, jalapeños, and minced garlic. Sauté for about 3-4 minutes until the veggies are soft and fragrant. • 2. Add the Spices: • Stir in 1 tsp salt, 1 tsp black pepper, 1 tsp cumin, 1 tsp ground coriander, and 1 tsp chili powder. Cook for another 2 minutes, allowing the spices to blend with the vegetables. • 3. Add Passata, Rice, and Stock: • Pour in 1.5 cups of passata (tomato puree) and mix well. • Add 1.5 cups of rice and 2 cups of stock, stirring to combine. • 4. Simmer: • Reduce the heat to low, cover the skillet, and let the rice simmer for 20 minutes, or until the rice is fully cooked and has absorbed the liquid. • 5.
