Let’s Create! Mofongo is a beloved Puerto Rican dish made from green plantains mashed together with garlic. Many add crackling pork rinds (like those sold in super market), also known as chicharrón. • Traditionally, to make mofongo, the green plantains are sliced and fried until tender, and then mashed with garlic paste and optionally with pork cracklings. • However, plantains could also be boiled (instead of fried) and get similar results. My recipe shows the vastly underestimated boiling method. • I also created a fantastically delicious mojo, specifically designed for mofongo.
