Patacones is a popular Latin American dish of fried plantains, can be enjoyed with sweet or savory toppings as a meal or appetizer. I put a paleo twist on the recipe by frying them in beef tallow instead of seed oils — healthier and more flavorful! • For toppings, I experimented with three types of beef: one dry-aged for 3 weeks, one dry-aged and slow-cooked at 80°C for 24 hours, and one fresh. • For 4 people as a starter or 2 as a meal. • INGREDIENTS • π 5 plantains • π 2 cups beef tallow • Toppings • π 75g cream cheese • π 2 avocados • π salsa(1 chopped onion and one chopped tomato) • π 400g beef • Step 1: Slice the plantains into 4-6 pieces each, depending on their size. Peel off the skin and discard it. • Step 2: Bring a pot of water to a boil. Add the sliced plantains and boil for about 5 minutes, or until they start to soften. • Step 3: Remove the plantains from the water and let them cool slightly. Using your hands or a plate, carefully flatten each piece into a disc shape. • Step 4: In a saucepan, heat the beef tallow over medium heat. Once melted, drain out any solid bits, leaving behind the clear, pure tallow. • Step 5: Carefully add the flattened plantain discs to the hot tallow. Fry for 2-3 minutes on each side, or until they become slightly crispy and golden brown. • Step 6: Remove the plantains from the pan and place them on a plate lined with paper towels to absorb any excess oil.
