#PlantBasedRecipes • For Free vegan diet information copy and paste the link in a web browser. https://sites.google.com/view/thislit... • Healthy And Tasty Vegan Meat Free Sausage Rolls Recipe • Ingredients: • For the Sausage Filling: • 1 cup cooked lentils (brown or green) • 1 cup walnuts, finely chopped • 1 cup breadcrumbs (use gluten-free if needed) • 1 small onion, finely chopped • 2 garlic cloves, minced • 1 tablespoon ground flaxseed mixed with 2.5 tablespoons water (flax egg) • 2 tablespoons soy sauce or tamari (for gluten-free) • 1 tablespoon nutritional yeast • 1 teaspoon dried thyme • 1 teaspoon dried sage • 1/2 teaspoon smoked paprika • 1/2 teaspoon salt • 1/4 teaspoon black pepper • 1 tablespoon olive oil • For the Pastry: • 1 sheet vegan puff pastry (use gluten-free if needed) • 1-2 tablespoons plant-based milk (for brushing) • Instructions: • Preparing the Filling: • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper. • In a large skillet, heat olive oil over medium heat. Add chopped onions and garlic, and sauté for 3-4 minutes until softened. • Add the finely chopped walnuts and cook for another 2-3 minutes until they begin to toast. • Transfer the mixture to a large bowl and add the cooked lentils, breadcrumbs, soy sauce or tamari, flax egg, nutritional yeast, thyme, sage, smoked paprika, salt, and black pepper. Mix until well combined and the mixture holds together when pressed. • Assemble the Sausage Rolls: • Roll out the puff pastry on a lightly floured surface. Cut the pastry sheet into two equal rectangles. • Spoon the sausage filling along the long edge of each pastry rectangle, shaping it into a log. Roll the pastry over the filling, sealing the edges with a little water. • Place the rolls seam-side down on the baking sheet. Cut each roll into smaller pieces (about 2-3 inches long). • Brush the tops with plant-based milk to give them a golden finish. • Baking: • Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and crispy. • Serving: • Serve warm with a side of tomato ketchup or vegan mustard.
