Seekh Kabab Biryani • ๐๐๐ ๐๐๐๐ ๐๐๐๐ • -Basmati Rice 500 gm (soak and boil them 70 % with Bay leaf, Cinnamon sticks, Green Cardamom, Cloves, Coriander leaves, Salt 2 tbsp ) • Chicken seekh kebabs • Oil 1 cup • -Bay leaf 3 to 5 • -Onion 2 to 3 sliced • Ginger Garlic paste 2 tbsp • -Tomatoes 3 medium (paste) • Green chilli 2 to 3 • Turmeric powder 1/4 TSP • Cumin powder 1tsp • -Biryani masala 2tsp • -Chilli powder 1 tbsp • -Coriander 1tsp • Salt 1tsp • -Yogurt 1 cup • Coriander leaves • -Green chilli 3/4 • For Layering • -Boiled rice • Prepared Seekh • -Prepared Kebab masala • -Fresh coriander 2 Tbsp • Biryani Masala 1/2 tsp • -Orange food colour 1 Tsp • -Ghee 1 Tbsp • ๐๐๐๐๐๐ : • -In a pot add oil, Bay leaf, Onion and fry until golden in colour. • Remove some for Garnishing • Now add Ginger Garlic paste and saute till the raw smell is gone. • Add ground tomatoes, green chilli and fry for 3 minutes. • Add the mentioned dry spices and cook well for 5 minutes. • Add yogurt and cook until the water dries. • Add coriander leaves mix. • Now add Seekh kebabs and fry for 3/4 minutes. • Sprinkle biryani masala, coriander leaves, cover and cook for 5 minutes on low heat. • Boil Rice: • -In a pot,add water,bring it to boil and add whole spice,Baby leaf, Cinnamon sticks, Green Cardamom, Cloves, Coriander leaves, Salt • -Add basmati rice (soaked), mix it and boil til 70% done,strain and set aside. • LAYERING: • Heat prepared Seekh kabab masala pot on low flame. • Spread Rice evenly. • Sprinkle biryani masala, add seekh kabab, fried onion, coriander leaves, food colour and ghee. • Cover with foil and lid. • Cook on low flame for 10 to 15 minute. • Your super delicious Seekh Kebab Biryani is ready.
