Watch me make a batch of soffritto (a.k.a. Italian mirepoix) and answer questions from folks who participated in my live Periscope video! • Soffritto is the base for so many fantastic dishes! Simply sauté minced onions (60%), carrots (20%), and celery (20%) in olive oil or ghee over medium low heat until tender and golden (about 1 hour).
