Trim and discard any extra fat around the pork shoulder. Then cut it into 2 inch chunks. • 2. Place the pork into a large bowl and add the pressed garlic cloves, grated onion, salt, pepper, red wine, and mayonnaise. Combine everything together then cover with plastic wrap and refrigerate overnight or at least 6 hours. • 3. Now soak the wooden skewers in cold water for about 30 minutes to 1 hour. • 4. Chopped the peppers and red onion into 1 inch pieces then place them in a bowl and seasons with salt, pepper, and olive oil. • • 5. Place the marinated pork and seasoned vegetables onto the skewers and grill on medium high heat for about 8-10 minutes turning the kabobs 3 times.
