Please find the full recipe with details and variations here • Roasting instructions • Roast eggplant over direct flame/coal/grill/broil in an oven at 450F for 40 minutes until the inside is very soft. • Tahini is sesame paste, available in stores. Use a good quality tahini that is not bitter. You can make your own by lightly toasting sesame seeds and grinding it to a smooth paste, it needs to release its oils. • Outside of the Levant region(where these dips originated) mutabbal is often called as baba ganoush. • To make a classic mutabbal, skip adding pomegranate molasses, jaggery and walnuts.
