My mother had made the cheesecake especially for me with pears. For me it was the best cheesecake in the world. • A size 28 springform pan was used here. • Ingredients for the dough: • 280 grams of spelled or wheat flour • 1 packet of baking powder • 50 grams of sugar • 100 grams of softened butter • 1 egg (size L) or 2 small eggs • Ingredients for the curd mix: • 1000 grams of low-fat quark • 1 packet of vanilla custard powder • 200 grams of sugar • 1 large can of Williams pears (use only as much as you need) • 1/2 lemon (3 tablespoons of lemon juice) • 2 packets of vanilla sugar • 250 grams of margarine or butter • 7 eggs • Pinch of salt • The cake is baked at around 160-170°C, depending on how brown you want it to look later. Towards the end, the temperature is then turned down so that it does not turn too brown.
