Instagram: @minkysmeals •   / minkysmeals   • Recipe • Ingredients: • 2 cups penne pasta • 1 cup grated mozzarella cheese • 1 cup grated cheddar cheese • 1 can coconut milk • 1 pack Parma rosa sauce mix • 1/2 green/yellow/red bell peppers seeded and thinly sliced. • 1/2 cup French cut carrots (julienne) • 2 table spoons hot Jamaican jerk seasonings ( I use walkers wood) • 3 cloves of garlic diced • 1/2 onion chopped • 1 sprig of eskellion • 1/2 small scotch bonnet pepper • 2 table spoons of coconut oil • Salt to taste • A bit of ground pepper (optional) • Method: • Boil pasta until cooked and firm. • Drain. • Sautee garlic onions scallions and bell peppers in coconut oil. Add scallions and carrots over medium heat. • Add jerk seasoning and scotch bonnet pepper then coconut milk (stir continuously to prevent burning) • Add ground pepper and salt to taste. Add Parma rosea sauce slowly stir in cheese until completely melted then add cooked pasta mixing thoroughly combining until its thickened. Then serve.
