Thank you so much for your support! • ------------------------------------------------------------------------------------------------------- • Ingredients: • For a 9 inch (22 cm) tart pan, about 10 servings • Crust: • 11 oz (310 g) Digestive Biscuits • ½ cup (110 g) Melted Butter • Toffee: • 1 1/3 cups (300 g) Granulated White Sugar • ½ cup (100 g) Water • Pinch of Salt • ½ cup (120 g) Milk • 1/3 cup (70 g) Unsalted Butter • 2 Bananas • 1 tablespoon Lemon Juice • Topping: • 1 cup (250 ml) Whipping Cream • 1 teaspoon Instant Coffee Powder • Directions: • Crust: • Place the Digestive biscuits into a food processor and blend until crumbs form. Add the melted butter and process until evenly moistened. Using a spoon press the mix against the bottom and sides of a round 9 inch (22 cm) tart pan. Refrigerate for about 30 minutes, meanwhile prepare the toffee. • Toffee: • Place sugar, water and salt in a medium size saucepan (I suggest to use an high saucepan because the caramel will bubble a lot) and cook over medium heat without stirring until gets a caramel color (about 15-20 minutes). • Remove the pan from the heat and quickly add the milk in two times, meanwhile stirring using a wooden spoon: the toffee will bubble a lot. • When stop bubbling return to heat and cook for 1 or 2 minutes stirring constantly, then remove from heat, add the butter and stir until smooth. • Cool down the toffee for about 10 minutes and pour over the Digestive crust. Refrigerate for at least 2 hours or until firm and ready to be served. • Assemble the pie: • In a large chilled bowl whip cream until stiff peaks form and set aside (store in the fridge if it’s hot climate). • Slice bananas and sprinkle lemon juice over the slices to prevent oxidation. Arrange banana slices over the toffee. • Place the whipped cream in a piping bag (I use Wilton 2D piping tip) and pipe a roses. • Sprinkle some instant coffee on top and serve immediately; if you don’t serve immediately, refrigerate it and serve within few hours. • I suggest to consume the pie in one time, otherwise the toffee will become more soft because of bananas and whipped cream contact.
