Probiotic Powerhouse Brewing Carrot amp Ginger Kvass at Home

๐Ÿฅ•๐ŸŒฟ๐Ÿน Carrot Ginger Kvass with Cinnamon Turmeric ๐ŸŒฟ๐Ÿฅ•๐Ÿน • ๐Ÿฅฐ Hi beautiful people ๐Ÿฅฐ • Kvass is a fermented drink of Russian origin. Kvass-brewers use raw buttermilk, the strained whey from yoghurt or dairy kefir to foster a healthy, bubbling population of good bacteria and produce a gorgeous fizzy drink. In my case, I used rejuvelac made from spelt grains. This colourful kvass is hugely energising and extremely soothing for your gut. • Makes 1 litre • 250g carrots, coarsely grated ๐Ÿฅ• • 1 tbsp freshly grated ginger (skin on) ๐Ÿง„ • A thumb of fresh turmeric, finely grated (skin on), or 1/2 tsp ground turmeric ๐Ÿงก • 1/2 tsp ground cinnamon ๐Ÿ‚ • 75ml whey, buttermilk, or kefir (dairy or plant-based alternative) ๐Ÿฅ› • (I'm using rejuvelac made from spelt grains) • 1 litre filtered water ๐Ÿ’ง • 2 tbsp raw, runny honey to taste (optional) ๐Ÿฏ • Put the grated carrots, ginger, turmeric, and cinnamon into the jar. Add the whey, buttermilk, or kefir and the water, leaving a 5cm gap at the top of the jar. Stir well and loosely fit a lid. • Leave to ferment in a cool, dark place for 3-4 days. When the kvass is effervescent, using a cloth-lined sieve, strain out the carrots and spices (you can use them in a raw slaw – delicious alongside a curry or in a flatbread with falafel). • Bottle the kvass and chill. Sweeten to taste with honey before serving. (Don’t add honey before this as the bacteria it contains may compete with the bacteria in the kvass).
